Make Our Rescued Food BDay Cake

For our first birthday I wanted to do something special to mark our big day. You will have seen all of the amazing cakes brands buy on Instagram to mark big occasions, but I wanted to see if we could do ours with a twist and perhaps a little more sustainably.

Those of you that know me, know that baking is not my forte, ironic that I launched a brand made from rescued food, I know... But I rolled up my sleeves and got to work to make our bday cake from the rescued food in our juicy products (minus the tomato ketchup) and guess what, it was actually delicious, pretty healthy and I'm 99% sure you could eat it for breakfast too.

Ingredients:

  • 1 cup of all-purpose flour
  • 1 cup of breakfast oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon sea salt
  • 1 cup coconut sugar
  • ½ cup orange juice
  • ½ cup olive oil
  • 2 teaspoons vanilla
  • Zest of two oranges

Recipe:

  • Preheat oven to 180 degrees C. Lightly oil a loaf tin
  • Blitz the breakfast oats in a blender until fine
  • Sift together flour, oats, baking soda, baking powder, and salt. Mix well
  • Squeeze three to four oranges depending on their size
  • In another bowl, whisk together sugar, fresh orange juice, olive oil, vanilla, and orange zest
  • Add dry ingredients to wet and mix until just combined
  • Pour batter into tin and bake for 35 minutes or until a knife comes out clean and edges of cake have begun to pull away from the tin
  • Allow cake to cool completely before removing from the tin
